Cooking chicken and vegetable stir fry for dinner at 1am
The chicken here comes as a whole thigh with a whole skin attached to it so I made a cool way to cook it: I detach the skin and sear it with no oil until it becomes crispy and releases a lot of chicken fat on the pan, then I cut the meat and cook everything in chicken fat and while it cooks I eat the crunchy skin and drink beer

I don't understand the proper way to cook stir fry.It's always described as cooking quickly but for me I need a long time to fully cook the vegetables and meatI think I need a different kind of pan like a wok to properly cook it the Chinese way
