Unless you import the spices, seasonings and herbs or it doesn't work out well. You can use some prepackaged stuff, try to come up with ingredient/seasoning analogues but it doesn't really line up well. A lot of the cuisine in West Africa (or Africa in general) use local breeds of crops or ingredients that aren't used much elsewhere.

Mystery meat pepper pots with a gorillion ingredients that look like witches' brew, eaten with doughy starches

Very simply prepared local vegetables, grilled fish and chicken, lots of boiled beans and corn, lots of bananas and fresh fruit
I honestly did not encounter foods in East Africa that were offensive to the palate or nose. I did get violently sick after eating at the Dar es Salaam fish market, though

I have and I like them, I just wanted to generalize on how most Bantus in east and southeast Africa eat, which is quite different from how they eat in the Horn of Africa.
