Why is it that only east asians and indians believe in reincarnation?
There being a magical sky daddy and a place of happy dreams or 72 virgins makes no sense obviously.

But reincarnation DOES make more rational and logical sense than there being nothing after you die. So why do atheists say life is meaningless?

Because there is some kind of distant possibility that our matter is just reorganized post death into a new living thing. There actually is a form of reincarnation that people ignore: childbirth. This is your literal genetic and spiritual essence being partially recreated. Just because your conscious soul doesn't operate it explicitly doesn't mean it doesn't continue in some form.

Something that mathematically wracks my brain, given an infinite amount of time, the probability that all matter, all atoms, reorient back into the exact same way they were when you were born, including you, should be 100%. This is based off of all of our assumptions about the universe though which are probably incorrect.

Religion as a technology is extremely outdated and needs a lot of work to catch up to the physical world. This is why you think some sects have shittier ideology than others, it's because there's a nagging feeling that something isn't adding up. The people who wrote the bedrock for their religions could NEVER have predicted the shape modernity would take.

We can see people being born every day
It appears that their consciousnesses are suddenly materializing out of nothing
We are able to witness consciousness not existing and then suddenly existing
We want to have an answer to where our consciousness goes when it disappears
We have an instance of where a consciousness appears

An irrational answer is that the consciousness goes to another separate dimension after death
That answer violates occam's razor

I don't remember anything from my past incarnations. Why does it even matter even if reincarnation is real? On the other hand I'm much more of the belief that only humans possess souls and we are made in the image of god

The pre-existence of Christ was a concept in Orthodox Christianity, it's a feature in Arian Christianity, and also reincarnation is believed by gnostics as well. It was phased out because it doesn't explain much outside of being used as a rhetorical device in christological arguments which is like extremely primitive theology. If you were to tell someone that your cremated ashes blend into the natural environment then later become a part of new life that's true strictly speaking, however the idea that your actions in this life have no immediate effect outside of affecting the next basically makes life into something between purgatory and corporate ladder climbing until you finally get to disappear completely. There's obviously no way to prove the last part, which is why some sects like Zen exist that try to disprove logic with koans and their leaders claim to be already enlightened and are merely hanging around until everything else is enlightened including inanimate objects somehow.
