I can tell you for Japanese: You type how a word is pronounced in our letters and the editor then displays a few choices of words that are pronounced that ways, and you pick one of them.

Well, not quite. You type 't', 'o' on the keyboard and that turns into hiragana 'to' and once you have two syllables a choice of kanji words are displayed. Hiragana has about 50 different syllable characters that you couldn't all fit on a keyboard.

That’s just the transliteration of と, not と itself. One has to agree on a transliteration convention. And that’s much less trivial than you think. You can spell Eльцин as Jelzin or Yeltsin depending on the reference language.

They can't. They have thousands of words that sound exactly the same but mean different things and are denoted by different kanji characters. I once asked a Japanese what do they do when talking to eachother and a misunderstanding comes up with such a word. He said they show their palm to the other person they are talking to and draw the kanji charakters on it with the finger of their other hand.

they type in latin letters (pinyin) and then it gets turned into chinese character automatically or they chose the character from some given options based on the thing they wrote
same with japanese except it first turns the thing you wrote in latin letters to hiragana and then to chinese characters (kanji) if you chose to
koreans have their own keyboard tho they actually have an alphabet with letters that works similar to latin/cyrillic/greek etc. even though it looks different
they bunch them together to make square chinese character looking things for some reason
