What phone should I get? Just recommend phones up to 1k or something like that, should I switch from android to iOS or is this a stupid move and I will not get used to it? I hate everything related to apple but I am wondering if I should get an iphone, otherwise is S25 ultra 256gb at 830€ a good choice?

I'd say get a last year's high end android phone. even if you don't play games, having a nice hardware makes everything feels a lot snappier and the screens are usually much nicerlike a S24 or S25 I guess
