all distribution transformers are 240 V, split into to hot wires that are 120 V

if you connect between one hot and neutral you get 120V, if you connect between the two hot wires you get full 240 V(because the two wires are out of phase by 180 degrees so the voltages add up)

higher voltage means less current, therefore less heating for high power loads
lower voltage is safer if you get shocked (marginally in this case though)
