Most diets around the world are carb heavy. I don't think people have problems with the carbs in Indian dishes but more not being used to certain commonly used spices and in the given volumes.

Think of it this way, 500 years ago, when food wasn't as abundant as it is, fatness was a sign of prestige and privilege because it meant you could eat as much as you like and that signalled wealth
The west reversed it, India didn't
Same thing with physical labor. Low castes are literally people who do physical labor (look it up).
