I know, and it's beautiful. And tasty. The only reason crap like corn atole does not get mentioned too often in these is because mayan cultural area is small and poor, so does not get much attention.
I bet there are some great traditional cuisines in other little places that do not get much attention, that are on par or even better than the ones which are famous.

There are some truths to it. Blue-bloods disliked garlic and onion because they came from the soil, therefore they must be slop for dirt farmers. That gave french cuisine a comparative advantage.
Mainly it is just tourist pressure and cultures defining themselves against the British norm and thereby exoticising themselves. British food means stuff that the average person actually ate, whereas no one in Japan ever ate chicken teriyaki, no one in Thailand ever ate pad thai, and no one in Turkiye ever ate halal snack packs. An authentic Japanese meal is white rice with miso soup and maybe a pickled vegetable. It is a massive humiliation of other cultures that their cuisine has been defined as the wacky slop they serve to tourists that their ancestors never could have imagined or afforded.
It is similar to the 'Gulf of America'. All seas are American to America or Spanish to Spain. They get named, as Spain did to the Gulf of Mexico, after the irrelevant polities on the far side. Trumpists are to stupid to realise that Gulf of Mexico was a shameful name for Mexico that predisposed a Western view of the world.
