Chinese food in the West means "food cooked by chinaman", where food = any slop. The chinks do have authentic Chinese food but they gatekeep it behind restaurants with chinese names and menu written in Chinese.

We have authentic regional cuisines in literally every medium to large size city/metro where most Americans live. I pretty much only go to Sichuanese places for example because they're popular in my southern cities for an accessible taste palate, but if I drive 20 minutes to Chinatown I can get Cantonese, Fujianese, Hakka, Beijinger, Uyghur, Chinese Malay, etc. etc.
On the other hand, I can drive 10 minutes into the hood and get a huge overflowing pack of chow mein and Kung Pao chicken for $8 made by Chinese and Mexican people

Chinese can't into marketing themselves, you'd think, but they simply don't care. All these chinese restaurants abroad are pretty much mom and pop shops that might have gotten some discounts on the soybean sprouts. there is no McChangs in Europe. we don't even have original peking duck. there are ofc upscale chinese restaurants, but they basically have the same menu as the slopshop near the gym
