Diced chicken is more meat than any other topping most places, tastes better with tomato sauce, and you already have plenty of fat with the cheese
If I have to tell you why mushrooms are good on pizza and with chicken you're too far gone.

But the actual reason is it's expensive here now unless you get certain frozen brands.

Chinese food has good regional cuisines but takeout is expensive for those good regional cuisines - like $16 for a main dish. Nobody likes Chinese American slop now, it's seen as ghetto.
Pizza chains got enshittified and decent pizza got expensive outside of the northeast.
Meanwhile, everywhere outside the Midwest (they don't season dey food) Mexican food is fast, cheap, and comforting in giant portions without compromising in taste
