I think this is more a question for /ck/
Forced to answer I'd say there's a good chance that
1)spices more reachable due to maritime proximity and navigability to spice producers in the global south
2)colder climates enable just relying on cold to prevent rot rather than spice to make slightly rotten foodstuff palatable/bearable
If I'm not just regurgitating (heh) unsubstantiated rumors here this is also part of the raison d'ĂȘtre for mustard since back then the landed lords would force peasants through monopoly "rights" to only buy their old meat from hunts until new stuff could be sold by other merchants at the local markets so people put mustard onto the meat to make it bearable
