Although, I probably would've diced up the tomatoes, cucumbers and avocado and made a sorta guac/salsa with it and would've used a good bit more seasoning.

What's that next to the sausage? Sour cream? soft cheese? Mayo?

Sausage, cheese and no carbs are all ideal.
Im not a huge fan of either cucumbers or acovados but I'll give you the benefit of the doubt since I know you produce a lot of avocados in mexico so maybe they are super fresh and home grown and delicious.
