There is no such thing as the Louisiana Bayou.
There is informally bayou country, which is generally the region of Louisiana south of Thibodaux.

Several reasons
First, nobody can develop there, so there is nothing to actually protect. That's the chief purpose of national parks and such, to keep development out and the land preserve. If development doesn't want a massive coastal swamp that is impossible to drain or build on, then there's less of a need to establish anything there formally. It protects itself.
Second, there's no commercial tourist value. So creating a national park wouldn't do anything on that end either. You wouldn't have tourists going down the bayou just to be eaten alive by mosquitos.

It's not worthless, it's just a giant swamp.
