Do people IYC sear this piece of meat just right without using the oven in the end? Switzerland, no
My preferred method for cooking any steak is a few minutes under the broiler. But I don’t even buy ribeye because there is too much fat.
I typically buy an entire vacuum-sealed chuck roll sub primal. One end attached to the ribeye, and from that end you can get a few nice chuckeye steaks. You also can get some denver steaks and flatiron steaks if you know what you're doing. They're not really steaks I care about so I usually just cut off the chuckeye steaks, cut off some chuck roasts, and dice the rest for taco/stew meat.
