I want to introduce the Japanese seasoning “kome-kouji” (fermented rice) to people in Scandinavia.
It is a traditional Japanese seasoning that can be used in a variety of seafood dishes.

The preparation is very simple: just freeze fresh salmon, then thaw and slice it, and mix it with rice malt, salt, and—if desired—chili peppers, sugar, or ginger.
