>swedish-japanese fusion cuisine>surströmming sushiCould it work?
Yum!
I suggest the surstromming and natto sushi roll.
Should have the juices from the can instead of soy sauce
>tfw no surströmming with durian pizza
I have some surströmming a friend brought me from Latvia. Haven't worked up the courage to open it yet

Japanese people are quite fond of fermented seafood.
I want to introduce the Japanese seasoning “kome-kouji” (fermented rice) to people in Scandinavia. It is a traditional Japanese seasoning that can be used in a variety of seafood dishes.I think this seasoning will really take Nordic fish dishes to the next level.
>>220806798the next step of the swedish-japanese fusion cuisine is tubshi - sushi in a tube.
>>220813251>sushi in a tube.

Nordic sushi
>>220818535man the bread looks sooooooo good
>>220806798Should have fine-diced raw onion instead of rice
>>220818449The preparation is very simple: just freeze fresh salmon, then thaw and slice it, and mix it with rice malt, salt, and—if desired—chili peppers, sugar, or ginger. Then, simply place it in the refrigerator and let it sit, stirring gently once a day; it will be ready to eat in about three to five days. You can use herring for this recipe, but it works best if you sprinkle salt on it before slicing, let it sit to draw out some of the moisture, and then marinate it.The only issue is whether rice malt is available in Scandinavia.
>>220818449By the way, you can also substitute it with a seasoning called shio-koji, which is made from kome-koji.
>>220821645>>220821799I can order rice malt from some site online, but why do you put fresh salmon in the freezer only to thaw it afterwards
>>220821870There’s hardly any problem with farmed salmon, but I’m worried about parasites in wild salmon.I’m sure you guys know all about this, right?
>>220808510it’s a spice. Not a main course. Eat it on white bread along with potato, dill and red onion. Just a few grams of it. Open the can in a tub of water to trap the gas.Enjoy!
>>220821924We don't eat raw salmon so it's maybe not something we don't have to consider. I've never even bought raw salmon I always buy frozen filets because salmon is expensive as fuck
>>220821870I’ve found a video that might be helpful. The amounts of koji and salt will vary slightly depending on how fatty the salmon is.https://www.youtube.com/watch?v=JqKVb2IEOLwhttps://www.youtube.com/watch?v=uw0flZa5igYhttps://www.youtube.com/watch?v=G8xyOajWqL4https://www.youtube.com/watch?v=6GARD_40QAghttps://www.youtube.com/watch?v=JejN8nsGIwc
>>220821988Is it hard to find salmon that’s safe to eat raw? Also, why is salmon so expensive when Norway is right next door?By the way, due to the war, import routes to Japan have been cut off, causing the price of Norwegian salmon to skyrocket.Since exports to Japan are expected to decline, the price of salmon in Sweden might go down, don’t you think?
>>220822168We don't eat raw salmon unless we go to a sushi restaurant, as for being in close proximity with Norway, there is no benefit at all
