Calenders have changed a lot all over. Major one being Julian to Gregorian. If the holy day and day of rest is Sunday then that should be the end of the week is my point.

In the Old Testament it was Saturday because that was the seventh day if you start counting from Sunday, which was the first day.

Sunday became the Sabbath day for Christians because that was the day that Jesus returned and him having returned on the first day of a new week symbolized his new covenant with his followers, promise of eternal life, etc. so that's the merit to having it be the first day of the week

It's the same in the Serbian Orthodox church. Even though almost all of our holy days go by the Julian calendar, easter is always on Sunday in the Gregorian Calender. Still most Orthodox countries start their week on Monday. Weekend means weekend not weekstart. Dunno what to tell you, it's even baked into English that Sunday is the wrong day to start the week.

Everybody thinks the week starts on monday, but it actually starts on sunday.
Our wednesday was renamed to "Mittwoch" by early Christian missionaries so that the pagans wouldn't celebrate Wotan/Odin. It literally means "the middle of the week". For wednesday to be the middle of the week, the week has to start on a sunday.
