Most caught fish was simply an export produce destined for the larger cities further inland. Hence all fish was brined, salted, smoked or cured in some way. Due to religious reasons meat was prohibited from being eaten on certain days (for example on every Friday) but fish wasn't. Thus a very large market for preserved fish existed. One of the mean products the Hanseatic Leage delt in was preserved herring for example.
