My dad works construction and he says it was normal midday at lunch go to the pub and have 3 pints then go up and work 100ft in the air then go to the pub straight after.

Like you need to "snack" something after a shot. Or first shot should be "sniffed". Or that you need exhale before taking a shot. Or that everyone shares everything at the table (like snacks, alcohol etc). Or that you need to drink for something, saying something before the drinking (it's usually done on celebrations). And some more.

I think this used to be true for most cultures. The chinese do this, I got drunk with some chinese people in central asia and then latter in China and every time I would get shit if I drank on my own, you had to raise your glass first.

Ever since then i've noticed in lots of old European films they do the exact same thing. Of course now its just a one off but I guess it used to be very customary to raise a toast before each drink.

Being a retarded drunk is not culture. And most people here can't even hold their drink. Sure, we generally can drink alot before crashing, but the number of drinks before we cross the threshold of becoming aggressive retards is comparatively very low. It's the whole happy drunk vs. angry drunk thing.
The one somewhat unique thing was that when we drank spirits we'd all use one and the same shot glass, sending it around in a circle. But nobody does that anymore either.

They don't "have to", but it used to be a thing. It's part of the aging out I mentioned. I myself drink a lot less now than before. For example, last time I went out I had a beer and four shots. A decade or so ago that wouldn't even have been a pregame. Or my friends birthday. He always gets 10+ beers per person. Last time everyone had like 6-8 drinks throughout the day.
And young people don't drink as much anymore either since they raised the drinking age. Ironically it's now easier to get weed, even with our draconian laws.
