I think the difference is that China and Korea still see themselves as countries that were beneath European countries as they weren't able to maintain full independence, whereas Japan doesn't have this insecurity, due to them being able to modernize and maintain independence on their own, only briefly being occupied after going to war with almost every territory in Asia. So in Japan the Medieval European fantasy setting is just seen as going to an exotic place that can be used to add character to a story, whereas it breeds a sense of insecurity in the other countries.
There are plenty of anime and other content they produce that are set in Japan.
