Oh my bad, so there is indeed Tarte tatin, which is much more caramelized than a regular apple pie.
There is also clafoutis, which is a crustless tart, most seen with cherries or dried plums, but the apple version is not uncommon.
There is also chausson aux pommes, a puff pastry with apple jam in it. quite incredible
