the way i do it, i take two nigiri sushis, and keep it horizontal while i lightly dip it into onions sauce, then i brush the bottom of the rice onto the other nigiri's fish to spread the onions sauce. i repeat the same steps with the other sushi and spread the sauce onto the fish of the first sushi. then i eat them.
obviously i'm not doing these in front of a chef.

I never cut my meat, I have teeth for that. Just stick a fork in it and tear pieces off. As a bonus all the delicious juices inside the meat go straight into your mouth.
