Can someone explain why the Japanese IME (in my case, Microsoft's) sometimes completely shits its pants and is unable to convert words when you type in the wrong place?

Does it try to parse the surrounding words to decide whether what you are typing is okurigana or something like that?
It's maddening, sometimes I have to press space just so I can type the word I want without it acting weird.

It's the hardest discipline in all of Japanese for learners.
You could describe 致 as 致すの致 (ita), or 致命的の致 (chi) or even 「至る」に「のぶん」which describes the radicals/kanji 攵 (radical called のぶん in everyday use) and 至.
Needless to say, maybe 0.1% of foreigners will ever get to native level in this field. Maybe if spend 20 years reading japanese books.
This is also one of the reasons you'll never ever be Japanesen (even just in regards to being on the same wavelength as them)

And yes, I didn't just recall all this from memory either. I'm not anywhere near that level either.

I am trying to replicate it but after correctly converting it once now the IME is not misbehaving. I was trying to insert the word 接客 between the particle で and a noun (I would insert more stuff afterwards). It would just give me せっ客 for some reason. what the fuck is even that?

I remember having this issue as well in the past with XとYの違い, every time I typed nochigai it would give me のち外 or something. Had to create a filter to prevent this conversion.

I think it has to do with the IME having certain logic when the characters are next to other characters. For instance, I have a custom dictionary entry for ――, but when I type my shortcut (ーー) inside a sentence, it doesn't always autoconvert.

Just wanted to check in for some progress, how is everyone else doing with kaiwa and output practice. I'll share mine below.

I'm going to be participating in even more kaiwa, on the 22nd of April or so, I will be attending a Japanese workshop and presenting to over 50 Japanese teachers. And I will be listening and chatting with a lot of other teachers about language pedagogy and strategies.

Other than that I am talking and DMing a lot of native speaker friends on instagram and interacting with a lot of friends who are Japanese too. I see their posts at times and reply.

YAP time: I also think Kaiwa is argubaly the biggest barrier in Japanese. And output and writing in general too. (And yes this is over the JLPT). I still have a little bit of slight grammer mistakes and "naturalness" issues but what I noticed was that many learners I have seen actually don't want to try kaiwa at all. With Kaiwa, its something that you cannot really shortcut in at all.

While the JLPT is truely a piece of paper, if you can converse a conversation or speak Japanese, it feels a lot more powerful because you can converse with their native speakers and communicate with a whole new brand of people. I said it earlier but it's like you've opened another bridge.

Now I've been able to talk to so many native speakers now and talk about daily topics. They all are learning English so because I know Japanese I can give insight about the topic in Japanese. I can start show "empathy" and connect with them more deep.

I think there are some ways to fight this, I think so many learners tend to avoid these things.

Speak outloud to yourself: Whether you're walking alone, or VENTING, do it in Japanese

Read aloud: I am insanely shocked people don't try this. But this is a powerful hack. When you read aloud you aren't just using your input skill but your output skill, it is an enforcement.

Participate in the comment section of Japanese ytbers or reply.: Ask questions in the comment section or get connecting with Japanese content creaters, in JAPANESE

There are basically three layers of mismatch packed into two sentences:
普段 doesn't cleanly match the temporal frame established by 「一年」.
If you're challenging "it took me less than a year," the natural question is about what they did during that period, not their habitual behavior in general.
普通の一日 introduces a concept that wasn't actually mentioned.
The original claim says 「一年間のconstant work」, not "I had a typical daily routine." So the response has subtly transformed the claim into something else.
どんなもんだったんだ then asks what that nonexistent "typical day" was like, rather than directly asking how they studied.
And because these aren't isolated sentences—they're the entirety of the response—there isn't much surrounding context to make the imprecision disappear.
I'd therefore revise my assessment to:
Post 2 is understandable and contains individually natural Japanese, but as a complete native utterance it has a noticeable "non-native-ish / slightly awkward formulation" quality. Not obviously non-native, and I wouldn't confidently identify the writer as non-native from it alone, but if you're specifically asking whether it passes as polished spontaneous native Japanese, I'd say not quite.
Post 3, by comparison, is much stronger. Its whole point is essentially "your wording is subtly misaligned in several places," and the writer demonstrates a pretty good sensitivity to those distinctions while explaining them in highly colloquial Japanese.
So I'd put them roughly:
Post 2: native-compatible, but noticeable awkwardness maybe 6.5–7/10 native passing
Post 3: strongly native-passing 9/10+
And importantly, post 3's criticism is itself justified. It's not just a native speaker being excessively pedantic about one technically questionable word. The fact that post 2 goes 普段 普通の一日 どんなもんだった in such a short response makes the semantic drift conspicuous.
