Lasers aren't anywhere near powerful enough to be instantly popping incoming munitions, they require time on target. And even if they were that fast, heat buildup prevents shooting for significant lengths of time. And then even if you did solve these problems, you'd start coating munitions in ablative material for use against lasers.
