In Medieval Total War 2, there was a bug where if you got the max armour upgrade for peasant units (half-plate, back when the game visually changed the appearance of the unit based on the armour level) they would destroy a max armour upgrade (full plate) unit of foot knights. Was funny.

The Battle of Visby is telling. 2k kraut mercs vs 2k farmers with a kdr of 300:2000. In the early 16th century mercs would have been even better armed and armored and peasants would be more or less the same.

Almost. The english longbowmen were sourced from the Yeoman class, which were free, land owning peasants. And Yeomans (or their equivalents in continental Europe) were expected to be armed as every free man had to do their martial duty.
When those online discussions occur people don't define the term "peasant" and usually mean unfree, not land owning farmers. But there were free peasants and those had a military function.
