Sinking any unarmed vessel is easy. Getting away with it is the hard part. You'll want to do your best to jam all of their communications, but most of these ships will carry Emergency Position-Indicating Radio Beacons that are activity water, are about the size of a walkie talkie to loaf of bread. Good luck trying to fish them all out of the water before somebody notices the SOS signals. And even if you manage to board the thing, kill or capture the crew, and get the boat to the bottom of the ocean without tripping any search and rescue alarms, the fact that the ship's transponder suddenly disappeared is going to be very suspicious. Coast guards, and possibly Navies will show up to look for the missing sailors eventually. If you aren't jamming, boarding, killing/capturing, then pretending to be the crew of the whaling ship until you can scuttle it or otherwise dispose of it, then your only real hope of sinking these things would be to torpedo them from a submarine, then hope and pray you don't run into another submarine or surface vessel with ASW capabilities.
