Aesthetically, 8mm. 30-06 is more practical for an American but if you care about practicality you'd get a 308. Lot more options for 30-06 rifles but they don't make a 30-06 hakim

8mm Mauser because I’m really stoked on all things German these days.

But even in normal times, like I posted in the last 30-06 vs 8mm Mauser thread, the differences between them are minimal and largely trivial, but I would prefer the 8mm Mauser solely for its slightly longer bullets. Other than that, the difference is a few mm case length, few mm overall length, and 2 or 3 human hairs difference in caliber.

If 30-06 looked more like picrel (308 loaded to ~3” COAL), I’d change my mind.

There isn't enough difference to make a difference between the calibers themselves. It ends up boiling down to a preference between the rifles and machine guns firing them.

Do you like American or German firearms more?
Or perhaps some of the other firearms that used .30-06 or 8mm Mauser down the road?
If you had an FN Mauser or FN-49 would you really feel that much different about it being 30.06 or 8mm? The only difference to most people posting here in the US is that 30.06 would be slightly cheaper to shoot.

I have Mausers in 6.5x55mm, .280AI, .30-06, and 9.3x62mm

The 6.5x55 and 9.3x62s are small ring Carl Gustav and Husqvarna made actions, the .280 AI is a P-14 action, and the .30-06 is the hybrid “strengthened” small-ring commercial action from the late 1940s.

I forgot to include an opinion. For me, I think that for most purposes, a .25-.30 caliber bullet is more than sufficient for terminal effect, superior for exterior ballistics, and if I want a larger bullet for brush busting or dangerous game, I'm going to want a .35-.40 caliber like .375 Ruger, 9.3x62, or .404 Jeffery. So I would choose .30-06 over 7.92x57 every time.
