Imo it would probably work best with a knife that's not sharpened to a razor edge. Going up to a 1000grit and stropping would leave tiny serrations on the knife and help the sawing action.

On a blade sharp enough the slicing action does nothing because the edge is too smooth.

So how you sharpen knife is you slide knife against rock with sandy texture like you're trying to shave the rock. Make sure rock is wet, and wash it after every few shaves. Do both sides, repeat this until knife cuts finger when you run it along edge like retard.

Buy plenty of heads. The heads yellow within a month or two.
They remove noticeably more chunks that get stuck between teeth/gum, but less than water floss.
The holding case it comes with fits well but us trash on the account of not enough air circulation. I keep it open to let it dry.
The toothpaste they sell is shit. Use something with stannous fluoride + sodium hexaphosphate (Crest advanced line) like a normal person.

The tech is real, but not for a chef sized blade, and certainly not for only $400.
Anyone selling shit like this that actually worked would make a video that's just 10 shots of it repeatedly sliding through wood and hard plastic. They're only showing it cutting through very soft things, which is all you need to know.

Its food release was also ass. It seems to actually cut skins nicely (looking at the tomato and the grape), but the edge isn’t great and the mechanism requires you to hold it like you’ve never used a kitchen knife, so his results in all of the cuts looked like trash even when the effort was lower due to the ultrasonic vibrations (curling cuts, etc).
