Supermarket tomatoes are selected for fast growth, perfect shape/appearance, and durability in shipping/handling. Flavor? Not even a concern. Sadly it's the same for most produce. They care about growth rates and appearance, not flavor. Same with grains, honestly. Quality rice or flour is amazing compared to the supermarket stuff or the industrial kind used for premade food.
