Assuming you like handloading, you can start with .45 Super (which can be as powerful as 10mm); if you get bored of it, then you can convert the gun to .40 Super (which is very similar to 9x25 Dillon).

NTA but last time I checked, they only offered conversions for Glock 21. To answer ops question; if you're not reloading 10mm is the way to go.

9x23 Winchester is the easiest “magnum” 1911 to make work properly, after that, probably .460 Rowland. Bottlenecked pistol rounds can be very mag fussy, and the 1911 is already a mag fussy design.
