Generally you have to have a good General, which probably means British or at least anglo.
Then you identify the objective you want (get to the next position) and the situations you want to avoid (chasing them like retards).
You then put your baggage in the most protected position, onioned by your archers and most disciplined troops. Then you put your most retarded knights (french) on the outside of the onion, where when they inevitably charge off to get themselves slaughtered they at least don't trample your own men.
That's pretty much how you do it.

That's actually historical, though. Foot archers are far cheaper (no horse) and can be packed into a much denser formation than horse archers. The result is that horse archers often did poorly when attacking into a formation of foot archers. Which is why you see "medium cavalry" in some places which could pull off a charge if necessary, but was lightly-armored enough that they could still maneuver around the battlefield and use bows. A compromise solution that wasn't great at either role, but sometimes the flexibility paid off.

Go read the primary sources and you get a better idea about Carrhae, it was the exception and not the rule. Plutarch described Crassus being deceived by a local barbarian so that virtually every decision he made was to the Parthian advantage.
If he'd stayed by the river the Parthians would have been at a huge disadvantage and probably not even accept a battle, who even knows if they could have kept this expensive cavalry army in the field if they themselves didn't get a quick decisive victory.
Even when he had realised that they'd blundered into the cavalry force he probably would have been better off if he'd maintained his initial line instead of forming the box and losing the option to withdraw.
Anyone who thinks that Carrhae was because horse archers are some kind of classical era cheat code needs to explain why the Parthians didn't reproduce the tactic a few years later when Antony was campaigning against them.

I read that the Romans got their ass kicked by Persian calvary for a long time before they figured out how to do it. Persia has loads of XP from fighting Scythians. On a flat plain, the goal is to trick the enemy and get them to do something stupid. Horse fighting is all trickery.

Romans were mainly a sea power that relied on sailing to ancient shitholes that didn't have much military organization yet and slaughtering them with superior armor and shielding tactics. Steppeshitters for most of the time existed in squabbling tribal groups. Their most common threat to settled people was raiding antics by war parties who were outnumbered militarily by sedentary people. A Sedentary civilization (i.e. most empires in the Middle East & China) often parked a fortresses in the middle of the steppe frontier and send out regular patrols into the grass to pacify unruly tribesemen similar to what the US Cavalry did to Injuns in the 1800s.

It is when they get into confederacies led by a dominant tribe that they become a problem but even then Sedentaryfags from the Middle East to China prioritized & managed to field sizable cavalry from time to time to counter nomadic threats. Plus, having a variety of troops besides horseboys gave them tactical flexibility. During the Han-Xiongnu Wars for example, although the Han Dynasty Cavalry was outnumbered by the Xiongnu, their infantry following the cavalry skirmishes provided safe haven for Han horsemen to rest & rearm by forming mobile wagon forts, ensuring that the Han could hold territory, enabling them to pursue the Xiongnu towards their nomadic communities and force them to surrender.

In addition settled agricultural civilizations had several methods raising sizable cavalry forces. Tang Dynasty China for example banned whole swathes of land from agriculture to promote grazing lands, set up a system of subject nomadic tribes to perennially give them tribute in horses, and set up the Tea-for-Horse trading system where Tibetans forked over herds of horses for chests of tea. You even had some very short-sighted Nomadic tribes who handed over their entire herds in exchange for being able to participate in the Silk Road trade.
