That...seems a bit of a bad idea.
I mean you CAN do it, but it would not be my first choice at all. I've seen what those things do to people (Alaska), I'd much rather 30-06 or 300wm.
Personally I have all three, which I bring depends on time of year, where I'm going, and what I'm hunting. Deer, smaller elk 308 is fine, ram, big elk, 30-06.
Moose, bear, I just go to 300wm because I'd rather not fuck around and find out.
Faster and more humane in a sense too, if that's an important factor for you.

The difference is less about terminal ballistics and more about trajectory and range estimation. Figure out the distance you're likely to shoot and the diameter of your target. Then look at a ballistics chart and figure out how much error in range estimation will cause you to miss. A laser rangefinder can let you use .308 where otherwise you might need .300WM.

Totally and completely depends on the terrain you plan on hunting. All three of those 30 cals you mentioned are good for their places. 300winmag gets it done in all circumstances, but it's a cunt to shoot a lot. '06 is the best compromise, but you won't be doing yourself any favors past 250yds with a big bullet. And 308 is fine if you're brush, or stand hunting. You really need to get away from the kitchen sink approach, sport. Get an '06 or a 308 for deer and then talk to people who actually hunt elk. That's an entirely different ballgame to deer. Full disclosure: .308win Rem 700 BDL/Redfield Widefield Illuminator 3x9 for deer in all circumstances, sometimes elk if late season dropped a shitload of leaves; .444 Marlin for elk in brush country; .300winmag Winchester 70/Leupold Vari X III 3x9 for open country elk.
