Without going full suicide charges how would one be able to take ground against the enemy?
Assume the enemy has no airforce and neither does your side, but you have access to heavy field guns abd artillery.
How would One to about it?

Artillery duels until you win -> your artillery supresses the enemy infantry -> your infantry can now approach their fortification and storm it
"approach their fortification" also includes mine clearing, smoke laying and a whole lot of other operations, but that's the general blueprint. We invented manouver warfare in an attempt to get around this cycle, but that only works on low density battlefields.

But seriously it was a valid strategy to plop castles down in key areas to supress the enemy and eventually control territory. Castles had offensive uses too.

I'm not a big fan of the "haha lol they forgot such a simple technology they're so silly haha" when humanity as a whole went through dozens of near-extinction apocalyptic events with at least two of those that we know of involving high chances of anything with an integrated circuit wanting to murder any nearby living being.
That being said as always, it's inconsistent and Vanquishers could have just as well been firing APFSDS all along since the shells are apparently longer and I think the only time someone tried to slap a name on them it was HEAT which made even less sense.
One of Macharius variants gets the same cannon and there it also can fire normal sized anti-infantry (AP?)HE blasts meaning both cannons could probably share ammo but size limitations and the inevitable grimdark explanation of each dart being hand-made by children in a sweat shop means that the Leman Russ variants carry just one type of ammo and they use the longer barreled ones to throw APFSDS and maximize that muzzle velocity.

You use prepatory fires to crack open the enemy defense.
You use suppressive fires to fix the enemy and make them unable to fight back.
You use close support fires to blow up everything that your company mortars can't destroy.
