A hig-intensity energy beam that melts pretty much anything in front of it. But how they exactly work and at what ranges tends to depend on ...whoever is writing the current novel.We know that they are used as anti-tank/anti-armor weapons becase they CAN melt a tank into a slag, but it's often mentioned that they are quite short-range weapons. Something-something-energy-distance-square-law-bullshit. Meaning, you have to get close to said tank in order to melt it. Otherwise, you will be just puffing hot air at it. What constitutes as "close range" seems to differ quite a bit. During Horus heresy there were specific mentions of Astartes fighting against some weird alien tank-equivalent with very hard outer shells, which seemed impervious to most weapons until Sergeant Bigh'bhalls took his melta, sneaked around some ruins into it's flank and melt it into a puddle of red-hot metal amalgam. but he was still like 100m away from it, or something. So it isn't really "shot-gun range" weapon.I never liked how they were essentially a shotgun in Space Marine games. They should have been exactly that: a specialist anti-armor weapon with very specific operational niche, but highly effective in that role.

Considering that they 'melt' tanks etc it's probably some kind of 'super-heated particle projector'. Then again, if you're looking for understandable, reasonable, or even consistent descriptions of 40k tech it might not be the franchise for you. Maybe they're loaded with tech-priest piss, and their collective hatred for unapproved tech (transported by said piss) causes enemy tanks to shut down when they get sprayed with it.
