no, definition and affirmation aren't the same kind of things
for example, gender could be defined as a cluster of things that have conceptual coherence, and so if that includes genitals and genital experiences, then altering the genitals could affirm due to genital experience becoming more congruent with other aspects of gender, all while not touching the definition

When a baby is born, its gender is define by its genitals, so let’s remove the genitals of this baby.

Suppose: Baby has genitals and its gender is define by them
To show: If you remove the genitals, that affirms the gender of the baby

All the babies are born with genitals, male, female, and intersex.
If you remove the genitals of that baby, does that affirms the gender of the baby?

Next question, what’s the gender of a baby without genitals?…

So by contradiction, you cannot remove the gender of a baby by removing its genitals, because a baby always will have a gender, but by removing them then you leave the baby without gender, that affirms that the baby has no gender, but what’s the gender of a baby without genitals?

So you don’t actually remove the genitals, you do CHANGE them.

So the statement “if you define gender by genitals, removing them affirms it”, is false, because when you remove the genitals you remove the gender, and there is no human without gender, you just CHANGE the genitals, you do not remove them.

And by changing your genitals you do change your gender!

Therefore, regarding OP's disingenuous question, genitals do make up some part of what defines gender. When you recognize someone's gender you also assume the have the corresponding genitals, even if you haven't directly seen them. When I CHANGE my genitals it does affirm my gender.
