Hussy here. Instant mash has its uses, but ironically not for mashed potatoes. If you girl failed and didn't make enough roux, it can be used as a thickener, like for soups. And it doesn't have that off-taste that you get with too much cornstarch. Can be used also in recipes using flour or breadcrumbs, great for a gluten-free alternative in meatballs, schnitzel, and things like that. Oh, and potato bread!
