What is the recovery process from FFS like? How long for the swelling to die down and how many weeks should I expect to take off work? (My coworkers know I'm trans but I don't want to look like a horror show oozing blood or anything)

gruelling
the first few days you'll be barely functional and pretty fucked up in hospital - forget about using your phone for entertainment lol, you'll probably be sleeping xd
after leaving the hospital, you'll need someone to help for the first few days at least (i.e. someone to collect your medication for you from the pharmacy, get you things, help wash incisions)
you'll be pretty much housebound for the first week or so, taking care of your face as a full time job + dosing meds on time - each surgeon has their own protocol so you'll be given instructions to follow
eating is the hardest part throughout honestly, i'd recommend packing your own food for the initial hospital stay post-op, just in case they don't have non-acidic liquid foods
(hospital I was in only had fucking yogurt, which after being intubated was absolutely terrible due to acidity - i'd have killed for icecream)
you won't be eating solids comfortably for ages, it was a gradual transition for me but it took about a month before i could chew properly and 2 months until i felt free to eat whatever i wanted

it took roughly a month or so for me to look somewhat presentable and not like i'd just been in a car crash, it's very much ymmv

What's it like going out in public like that? (e.g. getting groceries) I'm assuming you can't just wear a mask to hide it all if you have anything done to your forehead.

yea - the difficulty is caused by stitches inside the mouth for jaw work
if you're not having jaw work (assuming no chin either), the only other thing they might go through the mouth for is a trachial shave (if your anatomy allows it), but even then, i think that wouldn't be as bad
your surgeon should confirm all this before surgery thoug (:

you might be given a compression garment like picrel, but it might make you stand out more xd
