Are we playing the same game? I mean, yeah, a lot of this is kinda Game Theory-esque in the sense that there is one correct answer that has yet to be revealed, and that's mostly a consequence of the project being released in small chunks, but there's plenty of higher brow long-term analysis.
There's constant parallels and commentary to make out about how different kinds of people interact with fiction and ultimately how fiction itself is to be made and retold, an accelerating narrative about a teenager who made some fatal error in the past and is trying to develop friendships and have an adolescence while having their mistakes stalk them, and many smaller strings of character development about flawed people helping each other grow.

You are describing allegories and themes. I know Toby Fox makes stories with allegories and themes, very few people manage to make stories without those. And highbrow doesn't necessarily mean "deep" it just means high culture (I almost exclusively enjoy lowbrow stuff). I found the idea of spending a significant amount of time on analyzing Deltarune to be funny because I usually don't really take games seriously as an artform even though I often daydream of making them. BUT the first Thief game is aesthetically pleasing in a way that I actually take very seriously.

This is a preference thing and I am too exhausted to phrase myself well, so I won't go on for too long, but I kinda hate the whole premise of art needing to be or feel a certain way to be worth celebrating. It doesn't need to be "sophisticated" it just needs to be beautiful (and there are countless ways beyond surface aesthetics or literary strength to achieve this)
I think the alternative, "art for art's sake," goes to strange places, where a Tsukushi panel is somehow of less value than some self-indulgent modern piece in the Broad because it is missing some unspoken criteria for validation.
Anyways, the art-not-art debate in video games was had many times over, and the result is that there is a somewhat large space for decidedly "high art" gaming, so if you want to jump in, you've got company. I don't know if Manifold Garden, Disco Elysium, Inside or Alto's Adventure impress you though lel

Liking Deltarune is fine, and even great actually, because it *is* a good game. But it being everything you talk about is kinda crazy.
Its like people that like Tame Impala. His music *is* good (it's mixed and mastered incredibly well, for instance), but if it's all you talk about, you need to listen to more music. Because it's not doing anything crazy, lol, it just executes incredibly well on all of the basics. Same for Deltarune. It's an indie RPG that executes incredibly well on all of the basics.
