How do I express emotions better? Like, expressing my gratitude or happiness is extremely difficult for me.

if you talk to me irl, I most likely will look sad or bored even when I'm not.

You've probably got autism sweetie.
It can be hard for people with autism to express their feelings, I find it's best to learn the names of the emotions and then say them as you feel them.

If something makes you happy say "that makes me happy."
If something makes you grateful say "I'm grateful for that."

that's the thing, like I feel like when I do that it sounds fake. Like I don't understand the concept of expressing my happiness with my voice, at that point it would just feel like I'm acting

For 30 minutes a day sit infront of a mirror and try experimenting and acting out facial expressions for different scenarios.

Try acting as comes natural and see what it looks like, then try an over the top expression as if you were making fun of an over the top character, and see what that feels like.

Its good to use real scenarios you have been in.
