Note this will make 3 servings, you can double it and still fit it in a stock pot

Tools:
Large stock pot
Large skillet or a grill
Large Mesh strainer
Extra pot/large bowl to strain out broth
Chopping board, chef knife, cooking spoon/ladle, small fine strainer (to skim off scum)

Broth:
8 cups water
1 onion, halved and peeled
3 inch piece of ginger, cut into thick slices
1 carrot, peeled and quartered
2lb beef bones
1lb beef brisket (optional but adds an extra flavor bomb)
1 tbsp sugar
2 tsp salt
1.5tbsp fish sauce (or onions sauce if unavailable)

Spices:
You can either grab picrel from asian store,, or sometimes they have little bags of whole spices, and it works good or get
5 star anise
3 sticks of cinnamon
2 cardamom pods
2 cloves
2tsp coriander seeds

Toppings
6oz beef tenderloin, very thinly sliced (can freeze 30 minutes to slice and can also get thin slice from asian markets)
Medium rice noodles, ~5 oz dry or ~14oz fresh

Optional toppings:
Bean sprouts (wash this good its a bit slimy)
Cilantro
Thai basil (regular works if unavailable)
lime wedges
sliced pepper (jalapeno or similar size)
Hoisin sauce
Sriracha

In the skillet, or on the grill, or even in an onion on broil, char onion and ginger on high heat until a black spot forms. Set aside

If using whole spices, toast in a pan for a few minutes until aromatic

Cover bones and brisket in stock pot. Boil 5 minutes, drain, then rinse them off

Rinse out pot, then add bones, brisket, charred onion and ginger, carrots, sugar, salt, and whole spices if using. Cover and simmer for 3 hours Skim the scum that forms on top a few times

Remove brisket, you can use it later for other recipes and also you can put some in the soup later

Keep simmering 30 minutes uncovered. If you got the bagged, ground spice, you can add it now

Strain broth and discard everything else. Keep broth hot on minimum heat

Add fish sauce. Taste and add salt/sugar/fish sauce to your preference

While your broth is simmering I recommend washing, cutting and reserving the toppings in bowls in the fridge

Towards the end, prepare rice noodles according to directions. Usually its a quick boil then you drain and rinse with cold water to stop the cooking

Add rice noodles and thinly sliced beef and brisket to large bowls

Cover with gently simmering broth (this will cook the raw thin beef medium rare. For well done dunk it in the pot of broth for 10 seconds)

Add any desired toppings at the end
