How do I get stupid smooth legs and whatnot without getting ingrowns and strawberry leg?
Going "with the grain" isn't a close enough shave. It doesn't help that I have thick dark hair that irritates everything around it easily. Moisturizing and exfoliating hasn't helped. Am I being too hard with the razor? It only seems to happen around the thighs and other sensitive/fatty areas.

You might need glycolic acid to deal with strawberry legs. Also use an electric razor and epilator.

Switching to a single blade razor helped for me. Fewer blades = fewer passes = less irritation

And if you have coarse dark hair like you say (and light skin) I 10000% recommend getting laser hair removal. I struggled with ingrowns for years, laser is the number one best thing I have ever done for myself.

Laser is the answer, if you're a poor prole like me and can't afford it then shaving is the best you can get while staying practical.
