One thing I did hear that made me really feel like I understood Mat was that he is essentially a character that says, does and thinks completely different things at the same time, which ironically makes him self-aware but also somewhat delusional. I never really felt a military angle from him

If we take into consideration Grrm's blatant inspiration from Memory, Sorrow & Thorn, the easy guess is that the Others are simply children of the forest that decided to live in the ice and put up a border between the two factions and they probably worked a magical treaty. For whatever reason, the Others are beginning to break that treaty by going south.
