Well it's all cramped on the phone's screen. If you want to quote two different parts you can only copy-paste once before the text box blocks the screen. So he probably copy-pasted the first part, then forgot to do so for the second part.

Probably had a problem with you using "you are" and "you're" instead of sticking to a single one. Or maybe he thought that you shouldn't use "how" after "what" for some unknown ESL reason

You need to realize that you probably have better grammar than most native speakers, but it doesn’t matter since most native speakers think people who fixate too much on the rules of speech are nerds. Going around correcting grammar and speaking like a robot will get you ostracized faster than if you just spoke in broken English.

There's no rule in consistency, but the two do have different tones, especially when spoken. Telling a kid "You're going to school" vs. "You are going to school."

I still can't really see this being wrong, though. "What you are doing" sounds more relevant to what is currently being done, which was what I had in mind when I wrote that. "What you do" sounds like what has already been done or what will be done at any point in the past or future. I wanted everything to sound extra accusatory wherever I could in that instance, like they were caught red-handed.

I guess in that specific case since he posted the skyrim guard maybe it'd make more sense for him to make general statements regardless of time, but I can't see how just changing it to a continuous tense would make it that "unnatural" to be considered ESL tier instantly

Germans think they're really good at English because native speakers understand them perfectly well. You can be a fussy, little prescriptivist as much as you'd like but it's meaningless when our language lacks something like the Académie Française. Most native English speakers are totally fine with descriptivism and abusing -ing words happens in AAVE and other dialects all the time anyway.
