Pre-Christian Europeans were not pagans.Greek and Roman mythology and philosophy are the best preserved of all the pre-Christian beliefs so that's probably your best starting point. Germanic "paganism" was largely oral so what little exists written down was what could be remembered and preserved by monks after Christianization. A lot of attempts to understand their religious practices try to compare information from various regions to come to an understanding of the bigger picture.
