The Gospel of John because it is the only book in the New Testament that, and this is just my opinion, is an accurate historical and theological account of Jesus of Nazareth. And because it is the only book of the Bible that is free Jewish meddling

The best OT books are Ecclesiastes, Amos, Judges, Psalms, Malachi. The worst OT books are Numbers and 1 Chronicles. The best NT books are 1-3 John and Mark. The worst NT books are by far the Pauline epistles (barf) and the shitshow that is Revelation. However, the gospel of Thomas blows them all out of the water.

Paul's letters are more interesting if you take for granted that half of them are forgeries from different groups who disagreed with each other, and even the originals are chopped up, questionably arranged, and potentially heavily-interpolated selections from Paul's actual letters. Looking at their modern forms, it's easy to be surprised that Paul was Marcion's favourite apostle and the one who Valentinus claimed a teaching lineage from.

Best recommendation I can give is to get The Gnostic Bible by Willis Barnstone and Marvin Meyer. It is a collection of the majority of the known Gnostic texts across the different traditions and is categorised as such. It has a section prior to the texts really debunking a lot of the myths about Gnosticism, explaining the core concepts and showing how it was suppressed by the increasingly authoritarian orhthodox church. The first texts in the book are also the most primary of all the Gnostic texts, the Gospel of Thomas and the Gospel of John (yes the one in the New Testament).

Just a whole diffrent scale compared to the rest. Most of the other books are just some tiny patch in the middle east where tribes squabble over stuff that comparatively don't matter that much.
Meanwhile those two books are on a cosmic scale and directly involve the fate of every living thing ever for all time.
