The print on demand type books have swelled, used to be university publishers offered real hardbacks now many are barely typeset glue atrocities. Two main alternatives:1) Buy used. Any classic book has hardbacks for less than a shitty paperback. 2) Buy from small presses. Expensive limited editions are exploding right now. Imo physical books will become a niche thing like vinyl collecting. They still make them, but limited runs and with a lot of bells and whistles at far higher cost.

I got another copy of macbeth the Folger edition from there and the paper quality and binding seem worse than my other Folger editions

Easiest way to cut costs is to use cheaper paper. So yes, they are printing on worse paper stock. Seems like print in demand "quality" is becoming the standard across the board.
