Writing was already getting killed by clickfarm pajeet writers and autogenerated articles (before llms existed). Used to be a very long tail of assignments existed that writers could use to earn side money or to become a progressively better freelancer. Start with short stories, with articles on assignment. Do the gruntwork of copywriting, ad copy, translation, interview transcribing.
The internet killed the newspapers and magazines, blogs had their day then clickfarming outsourcing and SEO killed the internet writers.
We now have a massive glut of overqualified writers and editors taking the few jobs that exist and no leg up for new beginning writers.

almost all AI-written text is produced with near-zero effort put into disguising chatGPT or claude's linguistic quirks. this is because putting effort in would defeat the purpose for most use cases. if you were going to put effort into it you'd just write the damn thing yourself.
if you're clever and motivated, you can get these models out of the assistant basin and into contexts where they produce text in a different voice. this mostly isn't done for deceptive reasons because there's little to gain from it and for various reasons deceptive people have a harder time learning the necessary skills. harder is not impossible, though, and eventually you're going to see these tricks get used for mass production of convincing fake people.
