I don't get why people loved Katoki's Wing so much. It was literally just a pallete swapped wing zero custom.

Proto Zero was the "original" Gundam that was designed with the expertise of all five Gundam Scientists, and the baseline from which the other Gundams were derived. They collectively realized that Wing Zero would be absurdly and stupidly overpowered and that nobody should have that much power, but they could still downgrade the design and specialize it for their own individual roles for Operation Meteor.
