For the record, I've already watched 79' from start to finish a while ago.
I guess I never saw a reason to watch these movies because of that fact, but I've always heard these were the only good ones they ever made. Did they tweak anything else besides a few animation updates?

There are some differences if you’ve seen the tv series like the Luna II bit being reanimated entirely and having a different scenario but the real bulk of new animation is used in Encounters in space, the TV soundtrack is also remastered for the films giving a more 80s vibe

Some events get shuffled around to flow better as continuous 140-ish minute movies. The second movie gets the brunt of that, e.g. Hamon's revenge attack gets held back and squished onto the end of the Battle of Odessa rather than being left as a lone coda to the Ramba Ral stuff, 'Duel in Texas' gets brought forward to before the Battle of Solomon so it follows on directly from Amuro and Lalah meeting at Side Six and lets Amuro and Char can have their first fight of the movie before the halfway mark, etc. But nothing major really gets changed, all the key character and story beats are still there. The most substantive change is just M'Quve being removed from the fight at Texas entirely, so he now ostensibly survives the whole thing. So he can still pick up Dozle's family after Solomon with the order of events changed, but he doesn't do anything after that besides lurk in the background on Kycilia's ship, so it's not even that big a difference. Newtypes also get namedropped much earlier, and there's some small additions early on to properly introduce it at an earlier stage
There's some tweaks to the mechanical stuff; the G-Armour is axed entirely and replaced with a booster pack for the Core Fighter, so all the scenes which did have a G-Armour variation got redrawn. Some visual changes here-and-there, like Prof Flannagan getting a new character design. But that's all just visual stuff, and it's integrated around stuff from the TV series

Changing things like removing guntank from space, and selectively cutting most of the wackier elements is pretty notable. There's a difference not having the gundam hammer, the g-armor, the spear, a few of the "wait how does that work?" elements being cleared up. It never magically moves and combines two shields into one and less things turn into other things between cuts.

At least, that's how I remember it.

Ai Senshi does fit. If you understand the lyrics and contrast the tone of the song with the scene its used in youll understand its meant to be a manic drunken eulogy for the people that die in a senseless war by someone struggling to find meaning where there is none. That and the scene where you have the feddie bigwigs comfortably sitting in silence before cutting back to the violent Jaburo battle with Ai Senshi on full blast is endlessly funny and good editing.

By the way encounters in space sucks because it cuts out Char ga kuru.
