The zaku doesn't use tank tracks anywhere. It doesn't need spare tank tracks. It is just added weight.At least the nextflix series isn't canon.

The tank tracks may not make sense, but despite EF had MS, it still relies a lot on more conventional weapons such as tanks (which carried EF until MS got deployed), artillery and ATGM. Also it's a touch to give the Zaku the look of machine hastily put together with whatever part is available (due being actually a kitbash of destroyed Zaku) and to be coherent with OYW being WW2 in space (where track armours were common).
