Have you ever seen a pregnant mare in the show? Foals are made with alicorn magic and then brought to the parents by stork so it doesn't really matter what the gender ratio is or what combination any relationship is made of. Celestia makes them mostly mares because she's lesbian but leaves some stallions for the ones she can't convert to lesbianism.
